ABOUT ME |
Nestled amid the rolling green hills of the Warwickshire countryside, the Cotswolds distillery is one of the leading lights in England’s burgeoning whisky scene. Established in 2014 by American expat Dan Szor, the quaint distillery makes a range of award-winning gin, liqueurs and vermouths as well as a popular collection of single malt whiskies.
In fact, the Cotswolds’ whiskies are in so much demand that the company has built a second, dedicated distillery at its Shipston-on-Stour home to focus solely on whisky production, overseen by distillery manager Alice Pearson. The site is due to become operational by the end of 2022.
The distillery will continue to pride itself on using 100% locally grown floor malted barley for its single malts, offering a true taste of the Cotswolds. Fermentations are long – over 90 hours – while the stills are run to capture an intense fruity character in the spirit.
Maturation occurs in a variety of casks, including ex-Bourbon, ex-Sherry, ex-peated whisky and ex-red wine STR (shaved, toasted, recharred) barrels, allowing this craft distillery to showcase a rainbow of fruit-forward flavours throughout its range.
This whisky is the third release in Cotswolds’ Hearts & Crafts series, an annual limited edition collection that celebrates craftsmanship and the Cotswolds’ renowned arts movement.
This edition has been matured in rejuvenated French oak ex-red wine casks seasoned with Caribbean rum. If that sounds like a mouthful, wait until you try the whisky – it’s all soft brown sugar, molasses, rum-soaked raisins, stewed pears and orange zest. Just delicious!
