ABOUT ME |
Dublin’s Teeling distillery opened in 2015 at the start of Irish whiskey’s 21st century renaissance, heralding in a new era for distilling in the Irish capital.
As Dublin’s first new distillery for 125 years, Teeling set out to make its own mark on the Irish whiskey map, fusing traditional craftsmanship with innovation.
While waiting for its own spirit to mature, Teeling has over the years released a series of fruity and rich whiskeys sourced from undisclosed distilleries, which are matured and blended in-house by master blender and distiller Alex Chasko.
The distillery’s first fully-produced release came in 2019 with a single pot still whiskey, a blend of 50% malted and 50% unmalted barley that also became the first distilled in Dublin for 50 years.
Its launch also marked a revival of this traditional Irish whiskey style, which had in recent years been produced almost entirely by just one other distillery.
Now Teeling is exploring the development of this style through a collaboration with the Tree Council of Ireland. Each release in its new Wonders of Wood single pot still series, which focuses on full maturation in different species of wood, will see the distillery plant native Irish tree species in its own designated acre of land.
The first Wonders of Wood release was matured fully in virgin Chinkapin oak, a sub species of American white oak that imparts a nutty, spiced quality. It was so well received that it was named World’s Best Single Pot Still at the 2022 World Whiskies Awards.
Now OurWhisky is proud to give our members a taste of the second release in this award-winning series.
Teeling Wonders of Wood’s second release is a single pot still matured fully in virgin Portuguese oak from the Iberian Peninsula. With a higher tannin content than some other oak species, Portuguese oak imparts notes of marmalade, sandalwood, pepper and tobacco. Combined with Teeling’s signature single pot still spirit, the result is a fragrant, spicy whiskey with a dry, nutty character laced with bergamot, orange peel and creamy malt.
This whiskey is a perfect way to explore the impact of lesser known oak varieties while celebrating this uniquely Irish style.
